Description

A refreshing and chilled soup bursting with fresh flavors, perfect for hot summer days. This authentic tomato gazpacho is easy to make and delightfully satisfying.

Ingredients

Main Ingredients

  • 6 ripe tomatoes (Use the ripest tomatoes for the best flavor.)
  • 1 cucumber
  • 1 bell pepper (Feel free to swap for different peppers for a bit of heat.)
  • 1 small red onion
  • 2 cloves garlic
  • 3 cups tomato juice (Use high-quality juice for better flavor.)
  • 1/4 cup olive oil (Drizzle some extra on top when serving for added flavor.)
  • 2 tablespoons red wine vinegar (Can be substituted with lime juice for a twist.)
  • Salt (To taste.)
  • Pepper (To taste.)
  • Fresh basil (For garnish.)

Instructions

Preparation

  1. Chop the tomatoes, cucumber, bell pepper, red onion, and garlic into small pieces.
  2. In a blender, combine the chopped vegetables with tomato juice, olive oil, red wine vinegar, salt, and pepper.
  3. Blend until smooth, or pulse to retain some chunky texture if desired.

Chilling

  1. Chill the gazpacho in the refrigerator for at least 2 hours to allow the flavors to meld.

Serving

  1. Ladle the gazpacho into bowls and sprinkle fresh basil on top.
  2. Serve with crusty bread for a delightful meal.

Notes

Store any leftovers in an airtight container in the fridge for 3 to 4 days. Gazpacho is best enjoyed chilled, without reheating it. Feel free to experiment with different herbs and spices for variation.
