- 2 tablespoons Olive oil (fruity and smooth)
- 1 tablespoon Fresh lime or lemon juice (to awaken flavors)
- 1 pinch Salt
- 1 pinch Black pepper
- 1 teaspoon Honey or maple syrup (optional; for tart grapefruit)
- 2 tablespoons Fresh herbs (optional; dill and mint)

- Slice the fennel thin. Cut off the fronds and tough base, then slice the bulb as thin as possible.
- Toss fennel slices with a pinch of salt and a squeeze of citrus to soften and reduce harshness.
- Prep the grapefruit by peeling and cutting out the segments or slicing into rounds.
- Cut the avocado right before assembly to keep it green and creamy.
- Make a quick dressing by mixing olive oil, citrus juice, salt, pepper, and honey, if needed. Adjust to taste.
- Assemble the salad by adding mixed greens, then layering fennel, grapefruit, and avocado. Drizzle dressing on top and finish with herbs.
