- 2-3 pounds Chicken drumsticks
- 1 cup BBQ sauce (your favorite, plus extra for serving) (Choose a thicker sauce for better adhesion.)
- 2 tablespoons Olive oil or neutral oil
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 1 teaspoon Garlic powder
- 1 teaspoon Smoked paprika (Highly recommended.)
- 1 teaspoon Onion powder (Optional but nice.)
- 1/2 teaspoon Cayenne or chili powder (Optional for heat.)
Instructions
Preparation
- Preheat the oven to 400°F (200°C).
- Line a sheet pan with foil or parchment paper and place a wire rack on it if you have one.
- Pat drumsticks dry with paper towels to ensure they are very dry.
- Rub the drumsticks with olive oil and season generously with salt, black pepper, garlic powder, smoked paprika, onion powder, and cayenne or chili powder.
- Arrange the drumsticks in a single layer on the rack with some space between each piece.
Cooking
- Bake the drumsticks for about 25 minutes.
- Brush with BBQ sauce and bake for an additional 10 minutes.
- Flip the drumsticks, brush with more BBQ sauce, and bake for another 8 to 12 minutes.
- For extra caramelization, broil for 1 to 3 minutes at the end, watching closely to prevent burning.
Notes
Do not crowd the pan to avoid steaming. Let drumsticks rest for 5 minutes after baking to reduce mess when biting in.
