Description

Crispy oven-baked tacos filled with creamy chicken, bacon, and ranch seasoning for a quick and satisfying weeknight dinner.


Ingredients

Filling Ingredients

  • 2 cups Cooked chicken, shredded or chopped (Rotisserie chicken is a great shortcut.)
  • 6 slices Bacon, cooked until crisp and crumbled (Turkey bacon can be used as a substitute.)
  • 1 packet Ranch seasoning (Or 2-3 tablespoons of homemade ranch seasoning.)
  • 8 oz Cream cheese, softened (Full fat gives the best texture.)
  • 1 cup Shredded cheese (cheddar, Monterey Jack, or a mix) (Reserve some for topping.)

Taco Shells

  • 12 small Tortillas (Flour tortillas work best for crispiness.)

Optional Toppings

  • 1/2 cup Green onions, diced (For topping.)
  • 1/2 cup Diced tomatoes (For topping.)
  • 1/4 cup Jalapenos, diced (For topping.)
  • 1 cup Lettuce, shredded (For topping.)
  • to taste Hot sauce or salsa (Optional for serving.)


Instructions

Preparation

  1. Preheat your oven to 400°F (200°C) and lightly spray a sheet pan with oil or line it with parchment paper.

Mix Filling

  1. In a bowl, combine the cooked chicken, crumbled bacon, softened cream cheese, ranch seasoning, and a handful of shredded cheese. Reserve some cheese for topping.

Assemble Tacos

  1. Lay the tortillas on the tray. Fill one side of each tortilla with the chicken mixture, sprinkle some reserved cheese on top, and then fold over the other side.
  2. Press gently to ensure they stay closed.

Bake Tacos

  1. Spray the tops lightly with oil. Bake for about 8 minutes, then flip and bake for another 5 to 7 minutes until golden and crisp.

Serve

  1. Let cool for a minute, then top with lettuce, tomatoes, green onion, jalapenos, and drizzle with ranch or serve with salsa on the side.

Notes

For best results, warm tortillas in the microwave for about 10 seconds under a damp paper towel to prevent cracking during assembly. Properly flipping the tacos halfway through baking will ensure even crispiness.
