- 4 pieces Chicken breasts, boneless skinless (Use room temperature for even cooking.)
- 1 cup Cherry tomatoes (Leave whole if small, halve if large.)
- 2 cloves Garlic, minced (Pre-minced garlic can save time.)
- 1 cup Mozzarella cheese, shredded (For quick prep, use pre-shredded cheese.)
- 1 tbsp Honey or maple syrup (Can swap honey for maple for a different flavor.)
- 1 cup Balsamic vinegar (Red wine vinegar can be substituted.)
- 2 tbsp Olive oil
- 1 tsp Basil, dried (Or use fresh basil at the end.)
- 1 tsp Oregano, dried
Instructions
Preparation
- Preheat the oven to 400°F (200°C).
- In a bowl, mix together balsamic vinegar, honey (or maple syrup), olive oil, garlic, dried basil, oregano, salt, and pepper.
- Place chicken breasts in a baking dish and pour the marinade over them.
- Add cherry tomatoes to the dish.
Cooking
- Bake in the oven for 25-30 minutes, until the chicken is cooked through.
- In the last 5 minutes of baking, sprinkle shredded mozzarella cheese on top and return to the oven until melted and bubbly.
- Remove from the oven and garnish with fresh basil or parsley before serving.
Notes
Serve with pasta, crusty bread, or roasted vegetables. Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
