- 2 to 3 pieces very ripe bananas (The browner, the better for sweetness.)
- 2 cups rolled oats (Can substitute with quick oats.)
- 1 piece egg (Or use a flax egg for vegan option.)
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1 pinch salt
Optional Sweeteners and Add-Ins
- 2 to 4 tablespoons honey or maple syrup (Use if bananas are not sweet enough.)
- 1/3 cup chocolate chips (Optional add-in.)
- 1/3 cup chopped nuts (Optional add-in.)
- 1/3 cup raisins (Optional add-in.)
- 1/3 cup shredded coconut (Optional add-in.)
Instructions
Preparation
- Preheat your oven to 350°F (175°C). Line an 8×8 inch pan with parchment paper or lightly grease it.
- Mash the bananas in a large bowl until mostly smooth; a few small lumps are fine.
- Stir in the egg and vanilla extract.
- Add the oats, cinnamon, baking powder, and salt. Mix until well combined. If using chocolate chips or nuts, fold them in now.
- Press the mixture into the pan and smooth the top with a spoon.
Baking
- Bake for about 18 to 25 minutes. Remove from the oven when the center looks just set for a chewy texture; leave longer for a firmer texture.
- Let cool completely before slicing into bars.
Notes
Store in an airtight container for up to 2 days at room temperature, 5-7 days in the fridge, or up to 3 months in the freezer. To freeze, wrap bars individually and place in a freezer bag.
