Description

A vibrant and quick fried rice dish featuring chicken, colorful vegetables, and a creamy, spicy sauce that brings everything together.


Ingredients

Main Ingredients

  • 1 piece Chicken breast (Diced)
  • 1/2 cup Carrots (Chopped)
  • 2 cloves Garlic (Minced)
  • 2 pieces Green onions (Chopped)
  • 1/3 cup Green peas (Frozen is fine)
  • 2 pieces Eggs (Beaten)
  • 1 1/2 cups Rice (Cooked)
  • 1 tbsp Oil (For frying)

Sauce Ingredients

  • 2 tbsp Chili sauce, sweet
  • 1/4 cup Mayonnaise
  • 2 tbsp Soy sauce
  • 1 tbsp Sriracha
  • 1 tsp Rice vinegar


Instructions

Preparation

  1. Heat oil in a pan over medium heat.
  2. Add diced chicken breast and cook until fully cooked.
  3. Add chopped garlic, carrots, and green onions, sautéing until tender.
  4. Stir in the cooked rice and mix well.
  5. Add green peas, beating the eggs and adding them to the mixture, stirring until cooked.

Sauce and Serving

  1. In a bowl, mix together chili sauce, mayonnaise, soy sauce, Sriracha, and rice vinegar.
  2. Pour the sauce over the fried rice mixture, stirring well to combine.
  3. Serve hot, garnished with additional green onions if desired.

Notes

For best results, use day-old rice to prevent stickiness. Leftovers can be stored in the fridge for up to three days.
