Description
A cozy loaf that tastes like an apple fritter without the frying. This easy-to-make bread is perfect for breakfast or dessert with tender bread, pockets of apple, and a sweet glaze on top.
Ingredients
For the bread
- 2 cups Fresh apples, peeled and diced (Use a mix of tart and sweet apples for best flavor.)
- 2 cups All purpose flour
- 2 teaspoons Baking powder
- 1 teaspoon Salt
- 1 teaspoon Ground cinnamon
- 1 cup Granulated sugar
- 1/2 cup Brown sugar (Packed)
- 2 large Eggs
- 1/2 cup Milk (Or substitute with half and half, almond milk, or oat milk.)
- 1 teaspoon Vanilla extract
- 1/2 cup Unsalted butter, melted and slightly cooled
For the glaze
- 1 cup Powdered sugar
- 1-2 tablespoons Milk or cream (Add to desired consistency.)
Instructions
Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan, optionally lining it with parchment.
- Peel and dice the apples, toss them with sugar and cinnamon, then set aside.
- In a bowl, whisk together flour, baking powder, salt, and cinnamon.
- In another bowl, whisk eggs, sugar, milk, vanilla, and melted butter until smooth.
- Mix the dry ingredients into the wet ingredients just until combined, being careful not to overmix.
Layering and Baking
- Layer half of the batter into the prepared pan, add half of the diced apples, and sprinkle on a cinnamon brown sugar swirl mixture.
- Repeat with the remaining batter and apples, then use a knife to gently swirl through the loaf.
- Bake for 50-60 minutes or until a toothpick comes out clean or with a few moist crumbs.
- Cool the loaf in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
- Glaze the bread once it’s warm, but not too hot.
Notes
Allow the bread to cool for at least 30 minutes before slicing to prevent crumbling. The glaze can be adjusted for thickness by varying the amount of milk used.
