Soft, gooey, and packed with warm apple cinnamon flavor, these homemade rolls are the perfect breakfast for a chilly morning.
Ingredients
For the dough
- 1 cup Warm milk (Helps wake up the yeast, should feel like a warm bath)
- 2 teaspoons Active dry yeast or instant yeast (For leavening)
- 1 tablespoon Sugar (For the dough)
- 1 large Egg (Makes the dough richer)
- 1 stick Butter (Melted for dough, softened for filling)
- 4 cups All-purpose flour (Plus a little extra for the counter)
- 1 teaspoon Salt (Enhances flavor)
For the filling
- 2 cups Apples (Diced small; Granny Smith or Honeycrisp are best)
- 1 cup Brown sugar (For the gooey filling)
- 2 tablespoons Cinnamon (Main spice flavor)
For the frosting
- 4 oz Cream cheese (Softened)
- 1 stick Butter (Softened)
- 2 cups Powdered sugar (For sweetness)
- 1 teaspoon Vanilla extract (Enhances flavor)
- 1 pinch Salt (Balance the sweetness)
Instructions
Making the dough
- Warm the milk until it feels like a warm bath, not steaming. Stir in a pinch of sugar and the yeast. Let it sit for 5 to 10 minutes until foamy.
- Mix in sugar, melted butter, egg, flour, and salt. Knead until the dough looks smooth and elastic.
- If the dough feels sticky, add a spoon of flour at a time. If it feels dry, add a tiny splash of milk.
Letting the dough rise
- Put the dough in a greased bowl, cover, and let it rise until doubled, about 1 hour in a warm kitchen.
Preparing the apple filling
- Dice apples into small pieces and toss them with cinnamon and a spoon of sugar.
- Optionally sauté them for 3 to 5 minutes with a little butter for extra softness.
Rolling, filling, and slicing
- Roll the dough into a rectangle on a lightly floured counter.
- Spread softened butter all over, sprinkle brown sugar and cinnamon evenly, and scatter the diced apples on top.
- Roll it up tightly from the long side and slice into equal pieces.
Second rise and baking
- Place rolls in a buttered baking dish, cover, and let rise again until puffy, about 30 to 45 minutes.
- Bake until lightly golden and the center looks set, about 30 minutes. Cover with foil if they brown too quickly.
Making the frosting
- Mix softened cream cheese, softened butter, powdered sugar, vanilla, and a pinch of salt.
- If it is too thick, add a teaspoon of milk; if too thin, add more powdered sugar.
- Frost the rolls while they are warm.
Notes
Can adjust the frosting amount, add nuts, or swap for a glaze. Store leftovers at room temperature for 1 day or in the fridge for up to 4 days.
