A quick and delightful apple pie using store-bought puff pastry for a flaky, homemade dessert in under an hour.
Ingredients
For the pie
- 1-2 sheets Puff pastry, thawed in the fridge (Ensure pastry is cold before baking.)
- 5-6 medium Apples, peeled and sliced (Best to use a mix like Granny Smith and Honeycrisp.)
- 0.5 cups Granulated sugar or brown sugar (Use brown sugar for a deeper flavor.)
- 1 teaspoon Cinnamon (Can add a pinch of nutmeg for extra warmth.)
- 1 tablespoon Lemon juice (Helps balance sweetness and keeps apples bright.)
- 2 tablespoons Cornstarch or flour (Thickens the filling to prevent sogginess.)
- 1 pinch Salt (Enhances apple flavor.)
- 1 large Egg (For egg wash, or can use milk/cream.)
- Optional: vanilla extract, raisins, chopped walnuts, caramel drizzle (Customize to taste.)
Instructions
Preparation
- Heat your oven to 400°F (200°C). Line a sheet pan if using a flat surface.
- Thaw puff pastry in the fridge to keep it cold. If it cracks, press it back together gently.
Make the apple filling
- Peel and slice apples. Toss with sugar, cinnamon, lemon juice, salt, and cornstarch in a bowl.
- Let it sit for about 5 minutes to mingle flavors. Optionally, add a splash of vanilla.
Assemble
- For a pie dish: press one sheet into the dish, fill with apples, then top with the second sheet. Seal edges by pinching and cut a few vents on top.
- For a sheet pan: lay pastry on the pan, pile apples in the center leaving a border, then fold edges up over the apples.
Bake
- Brush the top with egg wash and sprinkle sugar if desired for a crispy top.
- Bake for 25-35 minutes or until deep golden and bubbling.
Cool and Serve
- Let it cool for at least 20 minutes before slicing to allow filling to set.
Notes
Puff pastry prefers to be cold going into the oven. For serving, consider vanilla ice cream or whipped cream.
