A delicious, quick-to-make sandwich featuring BBQ chicken, gooey cheese, and crispy bread, perfect for a filling meal with minimal cleanup.
Ingredients
For the BBQ Chicken Filling
- 2 cups cooked chicken, shredded or chopped (Rotisserie chicken works well.)
- 1/2 cup BBQ sauce (Use your favorite, adjust thickness with water if needed.)
For the Sandwich
- 4 slices bread (Sourdough, white, or Texas toast are recommended.)
- 2 tbsp butter or mayo (For the outside of the bread.)
- 1 cup cheese (Cheddar and mozzarella are preferred.)
- 1/4 cup optional add ons (Red onion slices, pickles, jalapenos, cooked bacon, ranch.)
Instructions
Prepare the BBQ Chicken
- Warm the shredded chicken in a small pan over medium-low heat and stir in BBQ sauce until coated and glossy.
- If using raw chicken, cook in a skillet with oil, salt, and pepper, then shred and mix with BBQ sauce.
Assemble the Sandwich
- Butter the outside of the bread slices. On the inside, layer cheese, BBQ chicken, any add-ons, another layer of cheese, and top with a bread slice.
Cook the Sandwich
- Heat a skillet on medium or medium-low. Place the sandwich in the pan and cook for 3 to 5 minutes per side, pressing gently with a spatula.
- Cover if necessary to ensure the cheese melts without burning the bread.
Rest and Serve
- Let the sandwich rest for 1 to 2 minutes before slicing.
Notes
For variations, try adding ranch for a creamy flavor, or jalapenos for heat. Use shred cheese for better melting.
