Ingredients

For the Blueberry Filling

  • 1 cup blueberries (Fresh or frozen blueberries)
  • 1-2 teaspoons sweetener (honey, maple syrup, or sugar) (Adjust based on taste)
  • 1 teaspoon lemon juice (For added acidity)

For the Sandwich

  • 4 slices bread (sourdough, brioche, or thick white sandwich bread) (Choose your preferred bread type)
  • 4 ounces cheese (sharp cheddar, white cheddar, or mozzarella) (Grated cheese melts better)
  • 2 tablespoons butter, softened (For buttering the outside of the bread)
  • pinch salt (Optional, to enhance flavor)
  • pinch cinnamon (Optional, for a warm flavor)
  • tiny bit thyme (Optional, for added complexity)


Instructions

Prepare the Blueberry Filling

  1. In a small pan, combine 1 cup of blueberries, 1-2 teaspoons of sweetener, and 1 teaspoon of lemon juice.
  2. Cook on medium heat until the berries burst and the liquid looks syrupy. Mash a few berries with a spoon to help thicken the mixture.
  3. If the filling looks too runny, continue cooking for another minute until it’s spreadable.
  4. Let the filling cool for a couple of minutes before using.

Assemble the Sandwich

  1. Lay out two slices of bread and butter one side of each slice.
  2. Flip the slices over so the buttered sides are facing down.
  3. Add a layer of cheese, covering the bread to the edges.
  4. Spoon a thin layer of the blueberry filling on top of the cheese.
  5. Add another layer of cheese on top of the blueberry filling.
  6. Top with the second slice of bread, ensuring the buttered side is facing out.

Cook the Sandwich

  1. Heat a skillet on medium to medium-low heat.
  2. Place the sandwich in the skillet and cook for 3 to 5 minutes per side, gently pressing down with a spatula.
  3. Cook until golden brown and the cheese is melted.

Notes

For best results, use medium-low heat to ensure the bread browns without burning the cheese. Allow the sandwich to rest for a minute before cutting.
