- 1 lb ground beef (lean is great but any ground beef works)
- 2 cups cooked rice (white or brown, cooked)
- 1 medium onion, diced
- 2 cloves garlic, minced (or garlic powder if that is what you have)
- 1 can cream of mushroom soup (or cream of chicken)
- 1/2 cup sour cream (for creamy texture)
- 2 cups cheddar cheese, shredded (a generous amount)
- 1/2 cup beef broth (or water to help with baking)
- to taste salt, pepper, paprika, Italian seasoning (season to taste)
Optional Add-Ins
- 1 cup frozen peas (optional)
- 1 cup corn (optional)
- 1 diced bell pepper (optional)
Instructions
Preparation
- Preheat your oven to 375 F (190 C) and lightly grease a 9×13 baking dish.
- In a large skillet over medium heat, brown the ground beef. Add the diced onion and cook until softened. Drain off excess grease if necessary.
- Stir in minced garlic and seasonings (salt, pepper, paprika, Italian seasoning). If desired, add crushed red pepper for heat.
- In a big mixing bowl, combine cooked rice, cream soup, sour cream, and a splash of beef broth. Stir in half of the shredded cheddar cheese.
- Add the beef mixture to the bowl and, if using, fold in any additional vegetables like peas or corn.
- Spread the mixture evenly in the prepared baking dish. Pour additional broth over the top if it appears dry.
- Sprinkle the remaining cheese on top.
- Bake uncovered for 20 to 30 minutes until hot and bubbly and the cheese is melted.
- Let sit for 5 to 10 minutes before serving to allow it to set.
Notes
Use freshly shredded cheese for better melting. Store leftovers in the fridge for up to 4 days. Freeze portions for later use.
