A cozy, cheesy, and filling casserole that makes a perfect dinner for busy weeknights, packed with protein and carbs all in one dish.


Ingredients

Main Ingredients

  • 1 lb ground beef (lean is great but any ground beef works)
  • 2 cups cooked rice (white or brown, cooked)
  • 1 medium onion, diced
  • 2 cloves garlic, minced (or garlic powder if that is what you have)
  • 1 can cream of mushroom soup (or cream of chicken)
  • 1/2 cup sour cream (for creamy texture)
  • 2 cups cheddar cheese, shredded (a generous amount)
  • 1/2 cup beef broth (or water to help with baking)
  • to taste salt, pepper, paprika, Italian seasoning (season to taste)

Optional Add-Ins

  • 1 cup frozen peas (optional)
  • 1 cup corn (optional)
  • 1 diced bell pepper (optional)


Instructions

Preparation

  1. Preheat your oven to 375 F (190 C) and lightly grease a 9×13 baking dish.
  2. In a large skillet over medium heat, brown the ground beef. Add the diced onion and cook until softened. Drain off excess grease if necessary.
  3. Stir in minced garlic and seasonings (salt, pepper, paprika, Italian seasoning). If desired, add crushed red pepper for heat.
  4. In a big mixing bowl, combine cooked rice, cream soup, sour cream, and a splash of beef broth. Stir in half of the shredded cheddar cheese.
  5. Add the beef mixture to the bowl and, if using, fold in any additional vegetables like peas or corn.
  6. Spread the mixture evenly in the prepared baking dish. Pour additional broth over the top if it appears dry.
  7. Sprinkle the remaining cheese on top.
  8. Bake uncovered for 20 to 30 minutes until hot and bubbly and the cheese is melted.
  9. Let sit for 5 to 10 minutes before serving to allow it to set.

Notes

Use freshly shredded cheese for better melting. Store leftovers in the fridge for up to 4 days. Freeze portions for later use.
