A quick and satisfying 15-minute lunch that combines the flavors of a classic Caesar salad in a convenient wrap.
Ingredients
Main Ingredients
- 2 large flour tortillas (or wraps of choice)
- 1.5 to 2 cups cooked chicken, chopped or shredded (Grilled or rotisserie works well)
- 2 cups romaine lettuce, chopped (Dry well after washing)
- 1/3 cup grated Parmesan (Plus more if desired)
- 3 to 4 tablespoons Caesar dressing (Store-bought or homemade)
Optional Ingredients
- black pepper (to taste)
- lemon squeeze (for extra flavor)
- croutons (add just before eating)
- bacon bits (optional)
Instructions
Preparation
- Chop the romaine and chicken.
- In a bowl, toss romaine with Caesar dressing, just enough to lightly coat.
- Add chicken and Parmesan and toss again.
- Taste and adjust with more pepper, lemon, or Parmesan.
- Warm tortillas for 10 to 15 seconds so they bend without tearing.
Assembly
- Lay the warm tortilla flat. Put the filling slightly below center, shaped like a short log. Leave a little border on the sides.
- Fold in the left and right edges, then roll from the bottom up, keeping it snug.
- If it feels loose, wrap it in parchment or foil for a couple minutes to hold its shape.
- If desired, toast the wrap seam side down in a dry skillet for 30 to 60 seconds.
Notes
To prevent soggy wraps, dry the romaine well, use dressing lightly, and keep croutons separate until serving. For meal prep, store filling and tortillas separately.
