- 1 can full fat coconut milk (Canned for best texture.)
- 1 medium onion, chopped (Basic flavor builder.)
- 3 cloves garlic, minced (Adds depth to the flavor.)
- 1 cup chicken broth (Helps balance the richness.)
- 2 tablespoons lime juice (Wakes up the flavors at the end.)
- 1 tablespoon oil (For browning the chicken.)

- 1 teaspoon paprika
- optional curry powder (Adds great flavor.)
- 1 handful fresh herbs (cilantro or basil) (For garnish.)
Optional Additions

Instructions
Preparation
- Pat the chicken dry and season it well with salt, pepper, and paprika.
- Heat oil in a large skillet. Brown the chicken for a few minutes per side. Remove to a plate.
- In the same pan, cook chopped onion until soft. Add garlic and stir for about 30 seconds.
Cooking
- Pour in chicken broth and scrape up any browned bits.
- Add coconut milk and bring it to a gentle simmer.
- Put the chicken back in, cover loosely, and simmer until cooked through, about 10 to 15 minutes depending on thickness.
- Finish with lime juice and taste for salt. Add herbs right before serving.
Notes
For a creamier sauce, be sure to use full-fat coconut milk. If the sauce is too thin, simmer uncovered for a few additional minutes or mix a teaspoon of cornstarch with water to thicken.
