- 8 large Eggs
- 1 cup Cottage cheese, small curd or whatever you have (Use full fat for the best texture.)
- 1 cup Shredded cheese, cheddar or mozzarella (You can substitute with pepper jack or feta.)
- 1/4 cup Milk, optional but nice for softness
- 3/4 teaspoon Salt (Adjust according to your preference.)
- 1/4 teaspoon Black pepper
- 1/2 teaspoon Garlic powder
- 2 cups Spinach, packed, fresh or thawed and squeezed dry (Make sure to squeeze out excess moisture.)
Optional Add-ins
- as desired Cooked breakfast sausage, diced ham, or chopped bell pepper (Feel free to clean out the veggie drawer.)
Instructions
Preparation
- Preheat your oven to 350°F (175°C).
- Grease a 9×13 baking dish or a similar size.
- In a large bowl, whisk the eggs until fully mixed.
- Stir in cottage cheese, shredded cheese, milk (if using), salt, pepper, and garlic powder.
- Fold in spinach and any cooked meats or veggies.
- Pour the mixture into the baking dish and spread it out evenly.
Baking
- Bake for 30 to 40 minutes, until the center is set. If the middle still jiggles, give it 5 more minutes.
- Let it rest for 10 minutes before slicing to help it hold together.
Notes
This dish is great for meal prep; leftovers can be stored in the fridge for up to 4 days or frozen for up to 2 months. Reheat in the microwave or oven for better texture.
