Description

A delicious and easy corn side dish smothered in a bold butter sauce with garlic, herbs, and a tangy kick that makes it a hit at cookouts and holiday meals.


Ingredients

For the Cowboy Butter Sauce

  • 1/2 cup unsalted butter (Melted)
  • 3 cloves garlic (Minced or grated)
  • 2 tablespoons lemon juice (Freshly squeezed)
  • 1 tablespoon Dijon mustard (For tang)
  • 1 teaspoon paprika (Adds warmth and color)
  • 1/4 teaspoon chili flakes (Optional for a kick)
  • 1/4 cup fresh herbs (Chopped parsley or chives)
  • to taste salt (For seasoning)
  • to taste black pepper (For seasoning)

For the Corn

  • 4 ears fresh corn on the cob (Husked and silk removed)


Instructions

Preparation and Sauce

  1. Make the cowboy butter sauce by melting butter in a small bowl and stirring in garlic, lemon juice, Dijon mustard, paprika, salt, pepper, chili flakes, and chopped herbs.
  2. Taste and adjust flavors if necessary.

Prep the Corn

  1. Husk the corn and pat it dry to help the butter cling better.
  2. Optional: cut each ear in half for easier grabbing.

Cook and Serve

  1. Brush some of the cowboy butter sauce over the corn before cooking.
  2. Cook the corn using your preferred method (oven, grill, air fryer, boiled, smoker) as described.
  3. Finally, brush the corn with more sauce after cooking, and serve.

Notes

Avoid overcooking to keep corn juicy. Let it rest 2 minutes after cooking for better flavor absorption.
