Description

A quick and delicious salad that combines creamy, salty bacon and sweet peas with sharp cheddar cheese.


Ingredients

  • 2 cups Frozen green peas, thawed and well drained
  • 6 slices Bacon, cooked until crisp and chopped
  • 1 cup Cheddar cheese, cut into small cubes
  • 1/2 cup Mayonnaise
  • 1/2 cup Sour cream
  • 1/4 cup Red onion, finely chopped
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 pinch Sugar (optional)


Instructions

Preparation

  1. Thaw and drain the peas. Put them in a colander and run under cool water until thawed. Let them drain well.
  2. Cook the bacon until crisp and then chop it. Let it cool before mixing to maintain its crunch.
  3. In a large bowl, stir together the mayonnaise, sour cream, salt, pepper, and sugar (if using).
  4. Fold in the peas, cheddar cubes, red onion, and about three-quarters of the bacon. Reserve the rest for topping.
  5. Cover and refrigerate for at least 30 minutes to let the flavors meld.
  6. Right before serving, sprinkle the remaining bacon on top.

Notes

For optimal flavor, drain peas well and use sharp cheddar for a punch of flavor. This salad is great for picnics and can be made ahead of time. Stir before serving and adjust seasoning as necessary.
