A quick and delicious salad that combines creamy, salty bacon and sweet peas with sharp cheddar cheese.

- 2 cups Frozen green peas, thawed and well drained
- 6 slices Bacon, cooked until crisp and chopped
- 1 cup Cheddar cheese, cut into small cubes
- 1/2 cup Mayonnaise
- 1/2 cup Sour cream
- 1/4 cup Red onion, finely chopped
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1 pinch Sugar (optional)

Preparation
- Thaw and drain the peas. Put them in a colander and run under cool water until thawed. Let them drain well.
- Cook the bacon until crisp and then chop it. Let it cool before mixing to maintain its crunch.
- In a large bowl, stir together the mayonnaise, sour cream, salt, pepper, and sugar (if using).
- Fold in the peas, cheddar cubes, red onion, and about three-quarters of the bacon. Reserve the rest for topping.
- Cover and refrigerate for at least 30 minutes to let the flavors meld.
- Right before serving, sprinkle the remaining bacon on top.
Notes
For optimal flavor, drain peas well and use sharp cheddar for a punch of flavor. This salad is great for picnics and can be made ahead of time. Stir before serving and adjust seasoning as necessary.
