Description

A cozy, practical copycat version of the famous Eggslut Fairfax Breakfast Sandwich that you can easily make at home, featuring soft eggs, melty cheese, and buttery brioche.


Ingredients

For the Sandwich

  • 2 pieces Brioche buns (Soft and a little sweet.)
  • 2 large Eggs (Fresh eggs for a fluffy texture.)
  • 1 slice Cheddar cheese (Sharp cheddar for flavor.)
  • 1 tablespoon Butter (For toasting the bun.)
  • 1 tablespoon Mayo (Optional, for extra creaminess.)
  • to taste Salt and pepper (For seasoning.)
  • to taste Chives (Optional, for garnish.)


Instructions

Preparation

  1. Toast the brioche buns cut-side down in a pan with melted butter until golden brown and set aside.
  2. Crack the eggs into a bowl, season with salt and pepper, and whisk until fully combined. Optionally, add milk or cream for a softer texture.

Cooking

  1. Heat a nonstick pan on low to medium-low. Add a small pat of butter.
  2. Pour in the whisked eggs and stir gently for a few seconds, allowing them to sit and cook slowly, gently nudging into soft folds.
  3. When the eggs are mostly set but still glossy, shape them into a mound the size of the buns, and place a slice of cheddar on top. Cover the pan for 30 to 60 seconds to melt the cheese.

Assembly

  1. Spread mayo on the toasted bun, add the cheesy eggs, and close the sandwich. Press gently in the pan for 10 seconds to bind it together.
