Ingredients

For the Chicken Marinade

  • 2 lbs boneless chicken thighs (Juicy bites)
  • 1 cup buttermilk (or milk plus a splash of vinegar)
  • 3 dashes hot sauce (For marinade)
  • 1 cup flour
  • 1/2 cup cornstarch (For crispiness)
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 tbsp paprika
  • 1 tsp garlic powder

For the French Toast

  • 8 slices brioche bread or thick Texas toast
  • 4 large eggs
  • 1/2 cup milk
  • 1 tbsp cinnamon
  • 1 tsp vanilla
  • 4 tbsp butter (For cooking)

For the Maple Hot Sauce

  • 1/2 cup maple syrup
  • 2 tbsp hot sauce (To taste)
  • 1 pinch salt
  • 1 tbsp melted butter (Optional for richness)

Optional Components

  • Pickles to taste pickles (To add tangy crunch)
  • Mayo to taste mayonnaise (Optional topping)

Instructions

Marinate the Chicken

  1. Combine buttermilk, hot sauce, salt, pepper, and garlic powder in a bowl.
  2. Add chicken thighs and let marinate in the fridge for 4 to 12 hours, or at least 30-45 minutes if short on time.

Prepare the Chicken

  1. Mix flour, cornstarch, salt, pepper, paprika, and cayenne (if using) in a shallow dish.
  2. Remove chicken from marinade, allowing excess to drip off, and coat in the flour mixture.
  3. Heat oil in a deep pan over medium heat.
  4. Fry the chicken thighs until golden and cooked through; let rest on a rack or paper towel-lined plate.

Make the French Toast

  1. In a bowl, whisk together eggs, milk, cinnamon, vanilla, and salt.
  2. Dip brioche slices quickly in the egg mixture, ensuring they are soaked but not falling apart.
  3. Cook in melted butter over medium heat until golden on both sides.

Prepare Maple Hot Sauce

  1. Mix warm maple syrup, hot sauce, salt, and melted butter (if using) in a small bowl.

Assemble the Sandwich

  1. Place one slice of French toast on a plate.
  2. Add the crispy fried chicken thigh.
  3. Optional: add pickles or mayo.
  4. Drizzle generously with maple hot sauce.
  5. Top with a second slice of French toast, press gently, and slice in half.

Notes

Let the chicken rest after dredging to help the coating stick better. Keep French toast warm in a low oven while frying chicken. Adjust seasoning in the French toast mix for a sweeter taste.
