Ingredients
For the Chicken Marinade
- 2 lbs boneless chicken thighs (Juicy bites)
- 1 cup buttermilk (or milk plus a splash of vinegar)

- 1/2 cup maple syrup
- 2 tbsp hot sauce (To taste)
- 1 pinch salt
- 1 tbsp melted butter (Optional for richness)

- Pickles to taste pickles (To add tangy crunch)
- Mayo to taste mayonnaise (Optional topping)
Instructions
Marinate the Chicken
- Combine buttermilk, hot sauce, salt, pepper, and garlic powder in a bowl.
- Add chicken thighs and let marinate in the fridge for 4 to 12 hours, or at least 30-45 minutes if short on time.
Prepare the Chicken
- Mix flour, cornstarch, salt, pepper, paprika, and cayenne (if using) in a shallow dish.
- Remove chicken from marinade, allowing excess to drip off, and coat in the flour mixture.
- Heat oil in a deep pan over medium heat.
- Fry the chicken thighs until golden and cooked through; let rest on a rack or paper towel-lined plate.
Make the French Toast
- In a bowl, whisk together eggs, milk, cinnamon, vanilla, and salt.
- Dip brioche slices quickly in the egg mixture, ensuring they are soaked but not falling apart.
- Cook in melted butter over medium heat until golden on both sides.
Prepare Maple Hot Sauce
- Mix warm maple syrup, hot sauce, salt, and melted butter (if using) in a small bowl.
Assemble the Sandwich
- Place one slice of French toast on a plate.
- Add the crispy fried chicken thigh.
- Optional: add pickles or mayo.
- Drizzle generously with maple hot sauce.
- Top with a second slice of French toast, press gently, and slice in half.
Notes
