Ingredients

For the Grilled Zucchini

  • 4 medium zucchini (Choose medium size for best grilling results.)
  • 4 oz goat cheese (Plain, soft log style works best.)
  • 1 cup fresh basil (Chopped fresh basil for topping.)
  • 2 tbsp honey (Adjust to taste, can substitute with maple syrup for vegan option.)
  • 2 tbsp olive oil (For brushing the zucchini.)

  • 1 tsp garlic powder (Optional, for added flavor.)

Instructions

Preparation

  1. Preheat your grill to medium or medium high.
  2. Slice the zucchini into long planks, about 1/4 to 1/3 inch thick, and pat dry to remove moisture.
  3. Brush both sides of the zucchini with olive oil and season with salt, black pepper, and garlic powder if using.

Grilling

  1. Lay the seasoned zucchini on the grill in a single layer.
  2. Grill for about 2 to 4 minutes per side until char marks appear and the zucchini is tender but not limp.
  3. Remove grilled zucchini from the grill and place on a platter.

Topping

  1. Option 1: Spread goat cheese on the warm grilled zucchini, drizzle honey over the top, and finish with chopped basil.
  2. Option 2: Mash goat cheese with a tiny splash of olive oil, stir in basil, and drizzle honey on top.
  3. Add black pepper at the end for enhanced flavor.
