Description

A simple, cozy, and filling casserole made with ground beef, rice, and cheese, perfect for weeknight dinners and easy leftovers.


Ingredients

Meat and Base Ingredients

  • 1 lb Ground beef (Lean is nice, but any variety works)
  • 1 cup Rice (Long grain white rice is preferred)
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 2 cups Beef broth (Or stock)
  • 15 oz Tomato sauce (Can substitute with diced tomatoes)
  • 10.5 oz Cream of mushroom soup (Or cream of chicken soup)

Creamy Mix Ingredients

  • 1 cup Sour cream (Or plain Greek yogurt)
  • 2 cups Cheese (Cheddar is the classic choice)
  • 1 tbsp Butter or oil (For cooking)
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Paprika (Optional but good)


Instructions

Preparation

  1. Preheat your oven to 375 F. Lightly grease a 9×13 baking dish.
  2. In a large skillet, cook the ground beef with diced onion until browned. Drain excess grease if needed.
  3. Add minced garlic and cook for about 30 seconds, just until it smells good.
  4. Stir in rice, beef broth, tomato sauce, cream soup, salt, pepper, and paprika.

Baking

  1. Pour the mixture into the baking dish and cover tightly with foil.
  2. Bake for about 35 to 45 minutes, until the rice is tender.
  3. Stir in sour cream and half the cheese. Top with the remaining cheese.
  4. Bake uncovered for 8 to 12 minutes, until melty and bubbly.
  5. Let it rest for 5 to 10 minutes before scooping. It thickens as it sits.

Notes

You can mix in vegetables like frozen peas or spinach for added nutrition. Also, consider using different types of cheese based on your preference.
