Ingredients
Rib Preparation
- 2 pounds Pork ribs (baby back, spare, or St. Louis)
- 1 tablespoon Yellow mustard or hot sauce (For rub adhesion)
BBQ Dry Rub
- 1 cup BBQ dry rub (Homemade or store-bought)
- 1 tablespoon Brown sugar
- 1 tablespoon Paprika
- 1 tablespoon Kosher salt
- 1 teaspoon Black pepper
- 1 teaspoon Garlic powder
- 1 teaspoon Onion powder
- 1 teaspoon Chili powder
- 1/4 teaspoon Cayenne pepper
Optional Ingredients
- 1 cup Apple juice (For spritzing during smoking)
- 1 tablespoon Butter (For wrapping if desired)
- 1 cup BBQ sauce (For finishing)
Instructions
Preparation
- Preheat the smoker to 250°F.
- Remove the membrane from the ribs and trim any excess fat.
- Season the ribs with a thin coat of yellow mustard or hot sauce, then cover with BBQ dry rub.
Smoking
- Place the ribs on the smoker, meat side up, and smoke for 3 hours.
- Spritz with apple juice every hour after the first hour.
- Wrap the ribs with butter and a splash of apple juice in foil and smoke for 2 hours.
- Unwrap the ribs and return to the smoker for an additional hour to firm up the bark and add BBQ sauce if desired.
- Check for doneness by looking for a deep color and pullback on the bones.
Resting
- Remove the ribs from the smoker and let them rest for 10 to 20 minutes before slicing.
Notes
Experiment with different wood types for smoking, such as hickory, applewood, or oak. Store leftover ribs in the fridge for up to 4 days and reheat gently to keep them moist.
