Ingredients
For the Sauce
- 1 cup Creamy peanut butter (Use a peanut butter that you enjoy the taste of.)
- 2 tablespoons Soy sauce or tamari (For gluten-free, use tamari.)
- 1 tablespoon Rice vinegar or lime juice (Both options are good for a tangy flavor.)
- 1 tablespoon Maple syrup or brown sugar (For sweetness.)
- 1 tablespoon Chili garlic sauce, sriracha, or sambal (Adjust to your spice preference.)
- 2 cloves Garlic, minced (Fresh is best, but garlic powder works too.)
- 1 inch Fresh ginger, minced or grated (Can substitute with ground ginger.)
- 3-6 tablespoons Warm water (To adjust consistency of the sauce.)
For the Noodles
- 8 oz Noodles of choice (Rice noodles, ramen, soba, or spaghetti are all good options.)
For Toppings (Optional)
- 2 tablespoons Sesame seeds (For garnish.)
- 1 scallion Green onion, sliced (For garnish.)
- 2 tablespoons Crushed peanuts (For garnish.)
- 2 tablespoons Chopped cilantro (For garnish.)
Instructions
Preparation
- Boil your noodles until just tender, then drain.
- While the noodles cook, whisk together the ingredients for the spicy peanut sauce in a bowl.
- Add warm water a tablespoon at a time while whisking until the sauce is glossy and pourable.
- Taste the sauce and adjust the flavors as needed.
Serving
- Toss the warm noodles with the spicy peanut sauce.
- Add a splash of hot water if the sauce tightens up too much.
- Top with green onion, sesame seeds, crushed peanuts, or your favorite toppings.
Notes
Store leftovers in a sealed container for 3-4 days. Warm up with a splash of water to rehydrate the sauce.
