Description
Bright and cheerful summer cookies that look like sunshine and are filled with tangy lemon curd, perfect for summer parties and gatherings.
Ingredients
For the Cookie Dough
- 2 cups All purpose flour
- 1 teaspoon Baking powder
- 1/2 teaspoon Salt
- 1/2 cup Unsalted butter (softened) (Softened means you can press a finger into it, but it still holds its shape.)
- 3/4 cup Granulated sugar
- 1 large Egg
- 1 teaspoon Vanilla extract
- 1 tablespoon Lemon zest (Optional but adds flavor.)
For the Lemon Curd Filling
- 1 cup Lemon curd (Homemade or store bought.)
- 3 medium Lemons (For homemade lemon curd.)
- 1/2 cup Sugar (For homemade lemon curd.)
- 2 large Eggs (For homemade lemon curd.)
- 4 tablespoons Butter (For homemade lemon curd.)
Instructions
Make the Lemon Curd
- In a small pot, whisk together sugar and eggs, then add fresh lemon juice and a pinch of salt. Cook on low to medium-low heat while stirring constantly until thickened.
- Remove from heat and whisk in butter until smooth. Optionally, stir in lemon zest.
- Let cool and then chill in the fridge.
Prepare the Cookie Dough
- Cream butter and sugar together until fluffy.
- Add egg and vanilla, then mix in lemon zest if using.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to the butter mixture and mix until dough comes together.
- Wrap the dough in plastic wrap and chill for at least 1 hour.
Roll and Cut the Cookies
- Roll the dough between two parchment sheets to about 1/4 inch thickness.
- Cut out sun shapes. For half of the cookies, cut a center circle for the lemon curd to peek through.
- Place cutouts on a parchment-lined baking sheet.
- Chill in the fridge for 10 minutes if the dough warms up.
Bake the Cookies
- Preheat oven to 350°F (175°C).
- Bake cookies for 8 to 10 minutes until bottoms are set and lightly golden.
- Cool on the tray for a couple of minutes before moving them to a cooling rack.
Assemble the Cookies
- Spread a small spoonful of lemon curd on the flat bottom of solid cookies.
- Top with cookies that have the center cut out and gently press together.
- Chill assembled cookies for 15 minutes to help set the curd.
Decorate (Optional)
- Dust with powdered sugar or drizzle with lemon glaze before serving.
Notes
Store filled cookies in the fridge in an airtight container for up to 3-4 days. Let sit at room temperature for 10-15 minutes before serving for best flavor.
