Ingredients

Protein

  • 1-1.25 pounds boneless skinless chicken thighs or breasts, cut into bite-size pieces (Use thighs for juiciness or breasts for a leaner option.)

Nuts

  • 3/4 cup unsalted cashews, toasted (Use salted cashews with reduced soy sauce if necessary.)

Vegetables

  • 1 red bell pepper, sliced (Adds sweetness and color.)
  • 1 small onion, sliced (Adds flavor and texture.)
  • 2-3 green onions, chopped (Optional; add for garnish.)
  • 1 handful snap peas, optional (Fresh snap peas add crunch.)

Aromatics

  • 3 cloves garlic, minced (Essential for flavor.)
  • 1 teaspoon grated ginger, optional (Adds warmth and depth.)

Sauce Base

  • 3 tablespoons low sodium soy sauce (Adjust based on taste.)
  • 1 tablespoon oyster sauce (Boosts flavor.)
  • 1 tablespoon fish sauce, optional (Adds a depth of flavor.)
  • 1.5 tablespoons brown sugar or honey (Provides sweetness.)

Tang and Heat

  • 1-2 teaspoons rice vinegar or lime juice, for tang (Adjust for preferred acidity.)
  • 1-2 teaspoons chili paste or sriracha, for heat (Start with less if you’re sensitive to spice.)

Thickener

  • 2 teaspoons cornstarch mixed with 2 tablespoons water (Create a slurry for thickening sauce.)

For Cooking

  • 1-2 tablespoons neutral oil (avocado, canola, or vegetable) (Used for cooking chicken and vegetables.)


Instructions

Preparation

  1. Toast the cashews in a dry pan over medium heat for 3-5 minutes until lightly golden and fragrant. Remove from the pan.
  2. In a small bowl, mix together the soy sauce, oyster sauce, fish sauce (if using), brown sugar or honey, vinegar or lime juice, and chili paste. Keep the cornstarch slurry separate.

Cooking

  1. Heat oil in a large skillet or wok over medium-high heat. Add the chicken in a single layer and allow it to sear for 2-3 minutes before stirring. Cook until mostly done, about 4-5 minutes.
  2. Add the sliced onion and bell pepper, cooking for 2-3 minutes. Stir in garlic and ginger for about 30 seconds until fragrant.
  3. Pour the sauce into the pan and let it bubble for 30 seconds. Add the cornstarch slurry and stir until the sauce thickens and is glossy, about 45 seconds to 1 minute.
  4. Turn off the heat and toss in the toasted cashews and green onions. Taste and adjust the seasoning with more lime for brightness, sugar for sweetness, or chili for heat as needed.

Notes

Store leftovers in an airtight container for up to 3-4 days. To keep cashews crunchy, store them separately and add after reheating.
