- 1 can Black beans, drained and rinsed (Rinse well to avoid murky salsa.)
- 1.5 cups Corn, canned, drained, frozen, or fresh (Use grilled corn for additional flavor.)
- 1 Red bell pepper, diced (Adds crunch and sweetness.)
- 1 Red onion, finely chopped (Go easy on strong onions.)
- 1 Jalapeno, minced (optional) (Spice it up as desired.)
- 1/4 cup Cilantro, chopped (Substitute parsley if desired.)
- 1 each Fresh lime juice (Fresh is best for flavor.)
- 1 tablespoon Olive oil (Just a small splash.)
- to taste Salt and pepper (Adjust according to preference.)

Preparation
- Drain and rinse the black beans, then let them sit in a colander for a minute to remove excess water.
- Dice the bell pepper, finely chop the red onion, and mince the jalapeno if using.
- In a large bowl, combine the black beans, corn, diced peppers, chopped onion, minced jalapeno, and chopped cilantro.
- Squeeze in fresh lime juice, add a splash of olive oil, then season with salt, pepper, and a pinch of cumin.
- Stir well and taste. Add more lime or salt if it needs more flavor.
- Let the salsa sit for about 10 minutes to enhance the flavors before serving.
Notes
Best enjoyed fresh, but it can be made ahead of time. Store in an airtight container in the fridge for 2-3 days. Add avocado just before serving for optimal freshness.
