- 1 tablespoon olive oil (A light drizzle to round out the flavors.)

Preparation
- Cut cold watermelon into bite-sized cubes, keeping them similar in size.
- Pat the watermelon lightly with a paper towel if it seems watery to keep the salad crisp.
- Crumble feta over the top with a mix of small crumbles and larger chunks.
- Chop mint and sprinkle it in, adding more if desired.
- Squeeze fresh lime juice over the salad.
- Drizzle olive oil and add black pepper.
- Toss gently to combine, being careful not to overly break down the watermelon.
Notes
Store remaining salad in the fridge and consume within 24 hours. Best served fresh. Do not freeze.
