  • 1 cup long grain white rice (Jasmine rice works great too.)
  • 1 cup frozen corn (Canned works in a pinch, fresh is best when in season.)
  • 2 tablespoons butter (Use salted or unsalted butter.)
  • 1 cup chicken broth or water (Broth adds flavor; water is fine.)
  • 1 teaspoon salt (Adjust to taste, especially if using broth.)
  • 1/2 teaspoon black pepper (Adjust to taste.)

Optional Ingredients

  • 1 small onion (Chopped, adds savory depth.)
  • 1-2 cloves garlic (Minced, for flavor.)
  • 2 tablespoons parsley or green onions (Chopped, for garnish.)


Instructions

Preparation

  1. Melt the butter in a medium pot over medium heat. If using onion, add it and cook for 2 to 3 minutes until softened.
  2. Stir in garlic for about 30 seconds, then add the corn. Cook for 2 minutes to warm up the corn.
  3. Add the rice and stir for about 1 minute to toast it slightly.
  4. Pour in broth or water, add salt and pepper, and bring to a gentle boil.
  5. Reduce the heat to low, cover, and simmer for 15 to 18 minutes without lifting the lid.
  6. After cooking, let it sit covered for 5 minutes, then fluff with a fork.

Serving Suggestions

  1. Add extra butter if desired for a richer flavor.
  2. Serve as a side with rotisserie chicken, blackened shrimp, or BBQ meats.

Notes
