- 12 noodles lasagna noodles (Regular, not oven ready)
- 1 pound shrimp, peeled and deveined (Small or medium works great)
- 8 ounces crab meat (Lump crab is amazing, but claw meat works too)
- 4 tablespoons butter (For the Alfredo sauce)
- 2 cloves garlic, minced (For flavoring the sauce)
- 2 cups heavy cream (For the Alfredo sauce)
- 1 cup Parmesan cheese, finely grated (For the Alfredo sauce)
- 1 cup Mozzarella cheese, shredded (For filling and topping)
- 15 ounces Ricotta cheese (Or a mix of ricotta and cream cheese for extra creaminess)
- 1 large egg (Helps the filling set)
- 1 teaspoon Italian seasoning (For flavoring)
- 1 teaspoon salt (To taste)
- 1 teaspoon pepper (To taste)
- Optional add-ins (Crushed red pepper, lemon zest, or chopped spinach)
Instructions
Preparation
- Cook the lasagna noodles in salted water until just tender. Drain and lay them flat on parchment or a lightly oiled baking sheet.
- Preheat your oven to 375°F (190°C). Lightly butter or spray a 9×13 baking dish.
Making the Sauce
- In a saucepan, melt butter and cook garlic for about 30 seconds.
- Pour in heavy cream and heat gently until warm.
- Stir in Parmesan cheese slowly until melted, adding salt, pepper, and Italian seasoning. Keep on low heat.
Mixing the Filling
- In a bowl, combine ricotta, egg, a handful of mozzarella, some Parmesan cheese, seasoning, and pepper.
- Carefully stir in shrimp and crab, being cautious not to shred the crab too much.
Assembling and Baking
- Spread a thin layer of Alfredo sauce on the bottom of the baking dish.
- Add a scoop of filling to each noodle, spread it out, roll up, and place seam side down in the dish.
- Pour the remaining sauce over the rolls and sprinkle with mozzarella.
- Bake for 25 to 30 minutes until bubbly and hot. Optional: Broil for 1 to 2 minutes for a browned top.
- Let sit for 10 minutes before serving to help everything set.
Notes
Serve with garlic bread or a fresh salad and consider storing leftovers for later enjoyment. These roll-ups also freeze well.
