Ingredients

  • 1 tsp Vanilla extract (Optional, enhances sweetness.)
  • 1 pinch Salt (Balances sweetness.)
  • 2 tbsp Sweetener (Maple syrup, honey, or zero-calorie option.)

For the Filling

  • 1/2 cup Greek yogurt (For the cinnamon swirl.)
  • 1 tbsp Cinnamon (For the filling.)
  • 2 tbsp Sweetener (Adjust based on taste.)
  • 1 tsp Vanilla extract (For additional flavor.)

For the Cream Cheese Glaze

  • 2 tbsp Light cream cheese (Softened for mixing.)
  • 1/4 cup Greek yogurt (For the glaze.)
  • 1-2 tbsp Sweetener (To taste.)
  • 1 tbsp Milk (To thin down the glaze.)


Instructions

Make the Batter

  1. In a blender, add milk, eggs, Greek yogurt, oat flour, protein powder, cinnamon, and salt.
  2. Blend until smooth and let sit for 2 to 3 minutes.

Cook the Crepes

  1. Preheat a nonstick skillet on medium to medium-low and lightly grease.
  2. Pour a small ladle of batter into the pan and swirl to spread thin.
  3. Cook for about 45 to 75 seconds until set, then flip and cook for another 15-30 seconds.
