Ingredients

Main Ingredients

  • 1 cup Cottage cheese (Full fat for creaminess, low fat works too.)
  • 1/2 cup Milk (Helps thin the sauce.)
  • 2 tablespoons Butter (For classic Alfredo flavor.)
  • 2 cloves Garlic (Fresh is best, garlic powder is fine.)
  • 1/2 cup Parmesan cheese (Freshly grated melts better.)
  • to taste pinch Salt (Do not skip.)
  • to taste pinch Black pepper (Do not skip.)

Optional Enhancements

  • 1 pinch Nutmeg (For added warmth.)
  • 1 tablespoon Lemon juice (Optional for brightness.)
  • 1/2 teaspoon Italian seasoning (Optional for depth of flavor.)


Instructions

Preparation

  1. Add cottage cheese and milk to a blender. Blend until smooth and glossy.
  2. In a pan over low heat, melt butter and add garlic. Let it warm for about 30 seconds.
  3. Pour in the blended mixture and stir gently.
  4. Add Parmesan and keep stirring until it melts and the sauce thickens.
  5. Taste and season with salt and pepper. Add a splash more milk if you want it thinner.

Notes

Store leftovers in a sealed container for up to 4 days. Reheat gently with a splash of milk.
