- 1 cup Cottage cheese (Full fat for creaminess, low fat works too.)
- 1/2 cup Milk (Helps thin the sauce.)
- 2 tablespoons Butter (For classic Alfredo flavor.)
- 2 cloves Garlic (Fresh is best, garlic powder is fine.)
- 1/2 cup Parmesan cheese (Freshly grated melts better.)
- to taste pinch Salt (Do not skip.)
- to taste pinch Black pepper (Do not skip.)
Optional Enhancements
- 1 pinch Nutmeg (For added warmth.)
- 1 tablespoon Lemon juice (Optional for brightness.)
- 1/2 teaspoon Italian seasoning (Optional for depth of flavor.)
Instructions
Preparation
- Add cottage cheese and milk to a blender. Blend until smooth and glossy.
- In a pan over low heat, melt butter and add garlic. Let it warm for about 30 seconds.
- Pour in the blended mixture and stir gently.
- Add Parmesan and keep stirring until it melts and the sauce thickens.
- Taste and season with salt and pepper. Add a splash more milk if you want it thinner.
Notes
Store leftovers in a sealed container for up to 4 days. Reheat gently with a splash of milk.
