  • 1 cup Cottage cheese (Full fat gives the creamiest texture, but low fat works too.)
  • 2 tablespoons Peanut butter (Creamy blends easiest, natural is fine.)
  • 1 tablespoon Sweetener (Honey, maple syrup, or a zero calorie sweetener.)
  • 1 teaspoon Vanilla extract (Optional for a more dessert-like flavor.)
  • a pinch Salt (Enhances the peanut butter flavor.)

Optional Add-Ins and Toppings

  • 1-2 tablespoons Cocoa powder (For a chocolate flavor.)
  • 1 teaspoon Instant espresso (For a coffee kick.)
  • 1 teaspoon Cinnamon (For extra warmth.)
  • 1 tablespoon Chia seeds (For added thickness.)
  • mini tablespoons Chocolate chips (For topping.)


Instructions

Preparation

  1. Add cottage cheese to a blender or food processor first. Blend for 30 to 60 seconds until it looks creamy, not curdy.
  2. Add peanut butter, sweetener, vanilla, and salt.
  3. Blend again until it looks like a thick pudding. Stop and scrape the sides once if needed.
  4. Taste and adjust sweetener or peanut butter for richer flavor if desired.
  5. Chill for 20 to 30 minutes for extra fluffiness; however, it can be eaten immediately.

Notes

Blend the cottage cheese alone first for best results. Use room temperature peanut butter. Chill before serving for a mousse-like texture.
