- 2 tablespoons Peanut butter (Creamy blends easiest, natural is fine.)
- 1 tablespoon Sweetener (Honey, maple syrup, or a zero calorie sweetener.)
- 1 teaspoon Vanilla extract (Optional for a more dessert-like flavor.)
- a pinch Salt (Enhances the peanut butter flavor.)

- 1-2 tablespoons Cocoa powder (For a chocolate flavor.)
- 1 teaspoon Instant espresso (For a coffee kick.)
- 1 teaspoon Cinnamon (For extra warmth.)
- 1 tablespoon Chia seeds (For added thickness.)

Instructions
Preparation
- Add cottage cheese to a blender or food processor first. Blend for 30 to 60 seconds until it looks creamy, not curdy.
- Add peanut butter, sweetener, vanilla, and salt.
- Blend again until it looks like a thick pudding. Stop and scrape the sides once if needed.
- Taste and adjust sweetener or peanut butter for richer flavor if desired.
- Chill for 20 to 30 minutes for extra fluffiness; however, it can be eaten immediately.
Notes
Blend the cottage cheese alone first for best results. Use room temperature peanut butter. Chill before serving for a mousse-like texture.
