Description

A creamy, sweet, and savory side dish that pairs perfectly with grilled meats, this Crack Corn Salad is a crowd-pleaser for any summer BBQ or potluck.

Ingredients

Main Ingredients

  • 4 cups sweet corn (fresh, frozen, or canned) (Dried well if frozen or canned.)
  • 8 slices bacon, cooked and crumbled (Reserve a bit for garnish.)
  • 1 cup cheddar cheese or pepper jack cheese, shredded (Cheese adds creaminess and flavor.)

Dressing Ingredients

  • 1/2 cup ranch dressing (Store-bought is recommended for convenience.)
  • 1/4 cup mayonnaise (For extra creaminess.)
  • 2 tablespoons lime juice (Freshly squeezed preferred.)
  • to taste salt (Start with a pinch and adjust as needed.)
  • to taste black pepper (Start light and adjust based on preference.)

Vegetable Ingredients

  • 1/4 cup green onions, sliced
  • 1 medium red bell pepper, diced (Or use jalapeno for a spicier version.)

Instructions

Preparation

  1. Cook the bacon until crispy, then crumble it once it cools.
  2. Prep the veggies by slicing the green onions and dicing the bell pepper. If using jalapeno, mince it as well.

Mixing

  1. In a large bowl, combine the corn, crumbled bacon, cheese, and prepared veggies.
  2. In a separate small bowl, mix together the ranch dressing, mayonnaise, lime juice, salt, and pepper.
  3. Pour the dressing over the corn mixture and stir until everything is well coated.
  4. Taste and adjust seasoning with additional lime juice or salt if necessary.
  5. Chill for at least 20-30 minutes to allow flavors to meld before serving.

Notes

For the best texture, dry your corn thoroughly, and avoid adding dressing until ready to serve to prevent sogginess. Reserve some bacon for garnish.
