Description

A refreshing and easy-to-make creamy salad that pairs well with any dish, perfect for summer barbecues and casual dinners.

Ingredients

Salad Ingredients

  • 2 cups cucumbers, diced (Use fresh cucumbers for the best crunch.)
  • 2 cups carrots, grated (Grate finely to ensure they blend well.)

Dressing Ingredients

  • 1 cup sour cream or yogurt (Greek yogurt can be used for a tangy flavor.)
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice (Adjust based on preferred tanginess.)
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Fresh dill or parsley for garnish (optional)

Instructions

Preparation

  1. In a large bowl, combine the diced cucumbers and grated carrots.
  2. In a separate small bowl, mix together the sour cream (or yogurt), mayonnaise, lemon juice, sugar, salt, and pepper until smooth.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Garnish with fresh dill or parsley if desired.
  5. Serve immediately or refrigerate for 30 minutes to enhance flavors.

Notes

If storing leftovers, keep in an airtight container in the fridge for up to three days. The cucumbers may soften over time; stir before serving again.
