Ingredients

  • 1 can Chickpeas (Rinsed and drained)
  • 1 small Garlic clove (Peeled)
  • 1/4 cup Fresh lemon juice (Use fresh for best flavor)
  • 1/4 cup Tahini (Stir if thick)
  • 1/2 tsp Salt (Adjust to taste)
  • 2 tbsp Extra virgin olive oil (Plus more for storage)
  • 1/2 tsp Ground cumin
  • 2 tbsp Ice water (To adjust consistency)


Instructions

Preparation

  1. Rinse and drain the chickpeas.
  2. In a food processor, combine chickpeas, garlic, lemon juice, tahini, salt, cumin, and olive oil.
  3. Blend until smooth.
  4. Add ice water as needed to achieve a creamy consistency.
  5. Taste and adjust seasoning if necessary.
  6. Serve with paprika and chopped parsley on top.

Notes

For storage, spoon hummus into a shallow container, press a thin film of olive oil on top, cover tightly, and store in the fridge for up to 5 days. Add a pinch of salt or lemon if needed before serving.
