A quick and easy one-pan dinner bringing together salmon, spinach, and pasta in a creamy sauce, perfect for weeknights.


Ingredients

Pasta and Salmon

  • 8-10 oz Pasta (Choose your favorite shape)
  • 2 fillets Salmon (About 10 to 12 oz total)

Vegetables

  • 3-4 big handfuls Fresh spinach (Substitute with baby kale if necessary)
  • 3-4 cloves Garlic, minced

Sauce Ingredients

  • 3/4 cup Heavy cream (Optionally swap with half-and-half or milk)
  • 3/4 cup Parmesan, freshly grated (Substitutes like Pecorino Romano are fine)
  • Olive oil or butter (For cooking the salmon)
  • Salt and pepper (To taste)
  • Optional: lemon zest, red pepper flakes, a splash of pasta water (For added flavor and richness)


Instructions

Preparation

  1. Boil the pasta in salted water until just tender. Save about 1 cup pasta water, then drain.
  2. While pasta cooks, season the salmon with salt and pepper. Heat a skillet with olive oil or butter and cook the salmon for a few minutes on each side until it flakes easily. Remove from skillet and set aside.

Cooking

  1. In the same skillet, add more oil or butter if needed. Add minced garlic and stir for about 30 seconds until fragrant.
  2. Pour in the cream and warm gently. Add Parmesan and stir until smooth, adjusting with a splash of pasta water if it appears too thick.
  3. Toss in the spinach and cook until wilted.
  4. Add the drained pasta and toss together. Flake the salmon into chunks and gently fold in, being careful not to break it apart.
  5. Taste and adjust the seasoning with salt, pepper, lemon zest, or red pepper flakes.

Notes

This recipe is flexible. Use leftover salmon, sub with canned salmon, or use frozen spinach. Adjust cream for a lighter sauce.
