- Brown the sausage in a large pot over medium heat. If it releases a lot of grease, spoon off a bit while keeping some for flavor.

- Add the diced potatoes, broth, and seasonings. Bring to a gentle simmer and cook until the potatoes are tender, about 12 to 18 minutes.
- Stir in the heavy cream, keeping the heat low. If you want a thicker consistency, mash some of the potatoes against the side of the pot.
