Description

This Creamy Sausage Potato Soup is a cozy, one-pot dish that combines savory sausage, hearty potatoes, and a creamy broth, making it perfect for busy weeknights when comfort food is needed.

Ingredients

Main Ingredients

  • 1 lb Sausage (Italian sausage, smoked sausage, or your choice) (Feel free to use turkey sausage for a lighter option or leftover cooked sausage.)
  • 4 cups Potatoes (Yukon gold or russet) (Dice into small, even chunks for even cooking.)
  • 1 medium Onion (Chopped.)
  • 3 cloves Garlic (Minced.)
  • 4 cups Chicken broth (or vegetable broth) (Use low sodium if the sausage is salty.)
  • 1 cup Heavy cream (or half and half) (Add at the end for the best texture.)
  • 2 tbsp Butter or olive oil (For sautéing.)
  • to taste Salt and pepper
  • 1 tsp Paprika or Italian seasoning (optional)
  • 1 cup Shredded cheese (optional) (For extra richness.)
  • 2 cups Spinach or kale (optional) (Add at the end for a nutritional boost.)

Instructions

Cooking Steps

  1. Brown the sausage in a large pot over medium heat. If it releases a lot of grease, spoon off a bit while keeping some for flavor.
  2. Add the chopped onion and cook for a few minutes until it softens. Stir in the garlic and cook for another 30 seconds.
  3. Add the diced potatoes, broth, and seasonings. Bring to a gentle simmer and cook until the potatoes are tender, about 12 to 18 minutes.
  4. Stir in the heavy cream, keeping the heat low. If you want a thicker consistency, mash some of the potatoes against the side of the pot.
  5. Taste and adjust seasonings according to your preference. Add more salt, pepper, or paprika as desired.
  6. If using spinach or kale, add it at the end and let it wilt for a minute.

Notes

This soup can be stored in the fridge for 3 to 4 days. For longer storage, consider freezing without the cream and adding it when reheating to maintain texture.
