A quick and creamy pasta dish that’s perfect for a cozy dinner, made with shrimp, garlic, parmesan, and sun-dried tomatoes in just 30 minutes.
Ingredients
For the Pasta
- 8 ounces fettuccine, penne, or linguine (Use any pasta you have.)
For the Shrimp
- 1 pound medium or large shrimp, peeled and deveined (Thaw if frozen.)
For the Sauce
- 2 tablespoons olive oil (For frying the shrimp.)
- 2 tablespoons butter (For flavor.)
- 4 cloves fresh garlic, minced (Fresh is best here.)
- 1/2 cup sun-dried tomatoes, drained (The ones in oil add extra flavor.)
- 1 cup heavy cream (Makes the sauce rich and smooth.)
- 1/2 cup freshly grated parmesan (Melts better than pre-shredded.)
- 2 cups fresh spinach (Wilts down quickly.)
- 1 teaspoon Italian seasoning (Or a mix of oregano and basil.)
- to taste salt and black pepper
- 1/4 teaspoon red pepper flakes (Optional for spice.)
- 1 lemon for squeezing (Optional to brighten the dish.)
Instructions
Cooking the Pasta
- Bring a large pot of salted water to a boil and cook the pasta until al dente. Reserve about 1 cup of pasta water before draining.
Cooking the Shrimp
- Pat the shrimp dry and season with salt and pepper. In a large skillet, heat olive oil and butter over medium-high heat. Add the shrimp and cook for 1-2 minutes on each side until pink and just cooked through. Remove and set aside.
Making the Sauce
- In the same skillet, add more butter if necessary. Add garlic and sauté for about 30 seconds. Stir in the sun-dried tomatoes and Italian seasoning. Then pour in the heavy cream and stir in the parmesan until smooth.
Combining Ingredients
- Add the spinach and let it wilt, then add the cooked pasta. Toss to combine, adding reserved pasta water as needed to loosen the sauce. Return the shrimp to the skillet and adjust seasoning with salt, pepper, and red pepper flakes to taste.
- Finish with a squeeze of fresh lemon, if desired, and serve immediately.
Notes
This dish is rich, so serve with a simple green salad or crusty bread. Leftovers can be stored covered for up to 2 days.
