  • 6 slices Bacon (Cook until crispy and chop into pieces.)
  • 4 large Potatoes (Slice thinly for best texture.)
  • 1/4 cup Green onions (Chopped for topping.)
  • 2 cups Cheddar cheese (Shredded, to melt over potatoes.)
  • 1 cup Sour cream (For serving.)
  • 2 tbsp Olive oil (For tossing potato slices.)


Instructions

Preparation

  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes and slice them into thin rounds.
  3. Toss the potato slices with olive oil, season with salt and pepper, and spread them out on a baking sheet in a single layer.

Baking

  1. Bake in the preheated oven for about 20-25 minutes, or until crispy and golden brown.
  2. While potatoes bake, cook the bacon in a skillet until crispy, then chop into pieces.
  3. Once the potatoes are cooked, remove them from the oven and layer them on a serving platter.
  4. Sprinkle the cooked bacon, cheddar cheese, and chopped green onions over the potatoes.
  5. Return to the oven for an additional 5-10 minutes, or until the cheese is melted.
  6. Serve hot with sour cream on the side.

Notes

For added brightness, squeeze lemon over the nachos. Add pickled jalapeños for heat. Store cooled leftovers in an airtight container in the fridge for 2 to 3 days. Reheat in the oven for best texture.
