Ingredients

For the Chicken

  • 2 pounds Boneless skinless chicken breasts (or thighs) (Thighs stay juicy and are more forgiving to cook.)
  • 8 ounces Cream cheese (Softened for better melting.)
  • 10.5 ounces Cream of chicken soup (Can substitute with cream of mushroom if preferred.)
  • 2 teaspoons Italian seasoning (Can replace with oregano, basil, and thyme.)
  • 2 cloves Garlic (Fresh or powdered as per preference.)
  • 2 tablespoons Butter (Placed on top of the chicken.)
  • 0.5 cups Chicken broth (Used to loosen the sauce.)
  • 8 ounces Angel hair pasta (Cooked fresh before serving.)
  • to taste Salt and pepper (Essential for seasoning.)


Instructions

Preparation

  1. Lightly grease your slow cooker insert if you remember.
  2. Add the chicken in an even layer.
  3. In a bowl, mix the cream of chicken soup, broth, Italian seasoning, garlic, salt, and pepper.
  4. Pour the sauce over the chicken.
  5. Add butter on top, then add cubed cream cheese.
  6. Cover and cook until the chicken is tender.
  7. Shred or slice the chicken, then stir everything to make the sauce smooth and creamy.
  8. Serve over angel hair pasta.

Notes

Avoid cooking the pasta in the slow cooker; it turns gummy. Stir well at the end for a creamy sauce.
