Description

These Crock Pot Street Tacos feature tender, flavorful beef cooked to perfection, topped with fresh ingredients to create a satisfying and fun taco night meal that even picky eaters will love.

Ingredients

Main Ingredients

  • 3-4 pounds beef (chuck roast, flank steak, or skirt steak) (Chuck roast is preferred for tenderness.)
  • 1 medium onion, sliced or chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth ((or water in a pinch))
  • 2-3 tablespoons lime juice
  • 2 tablespoons apple cider vinegar ((optional for tang))
  • 2-3 tablespoons taco seasoning ((homemade or store-bought))
  • 1 teaspoon salt ((adjust to taste))
  • 12 pieces corn tortillas

Toppings

  • diced onion (for garnishing)
  • fresh cilantro (for garnishing)
  • salsa (red or verde)
  • lime wedges (for serving)
  • sliced radishes (for crunch)
  • crumbled queso fresco (for topping)
  • pickled jalapenos (for optional heat)

Instructions

Preparation

  1. Sprinkle the beef with taco seasoning and salt.
  2. Add the sliced onion and minced garlic to the slow cooker, then place the seasoned beef on top.
  3. Pour in the beef broth, lime juice, and apple cider vinegar if using.

Cooking

  1. Cover the slow cooker and cook on low for 8 to 9 hours or high for 4 to 5 hours, until the beef is tender and shreddable.
  2. Shred the beef using two forks and let it sit in the juices for a few minutes.
  3. Warm the corn tortillas in your preferred method (gas flame, skillet, or microwave).

Serving

  1. Assemble the tacos by piling on shredded beef and adding desired toppings.
  2. Serve with lime wedges on the side.

Notes

For extra flavor, consider making your own taco seasoning. You can easily store leftovers and ensure a delicious taco night whenever desired. Make sure to warm the tortillas to maintain their texture.
