- 1 large or 2 small Cucumber (English cucumbers are great because the skin is thin.)
- a pinch Salt (Plus a little more for the dressing.)
- Optional crunch: sesame seeds, chopped peanuts, or sunflower seeds
- Optional extras: sliced scallions, chopped cilantro, a little chili flake
Dressing Options
- Quick lemon honey dressing: Mix lemon juice, a small spoon of honey, olive oil, pinch of salt, black pepper. (Bright and simple.)
- Easy sesame lime dressing: Mix lime juice, soy sauce, a little sesame oil, a tiny bit of maple or honey, and chili flakes if desired. (Snacky and addictive.)

Preparation
- Wash your veggies well. If your cucumber skin is thick or waxy, peel it, but typically leave it on for color.
- Use a peeler to shave the carrots into ribbons, rotating the carrot as you go. Snack on the skinny core or chop it up.
- Do the same with the cucumber, stopping when you reach the seedy middle to prevent excess water. Pat the ribbons dry if necessary.
- Toss the ribbons in a bowl with a pinch of salt and let them sit for 5 minutes to draw out water.
- Drain any extra liquid, add your dressing, and toss gently to keep the ribbons intact.
Notes
For a heartier version, pair the salad with something creamy like a chickpea avocado feta salad. Store undressed ribbons separately in a tight container with a paper towel to absorb moisture.
