A quick and refreshing salad made with crisp ribbons of carrots and cucumbers, paired with a simple dressing for a light, healthy snack or side dish.


Ingredients

Main Ingredients

  • 2 medium Carrots (The sweeter and firmer, the better.)
  • 1 large or 2 small Cucumber (English cucumbers are great because the skin is thin.)
  • a pinch Salt (Plus a little more for the dressing.)
  • Optional crunch: sesame seeds, chopped peanuts, or sunflower seeds
  • Optional extras: sliced scallions, chopped cilantro, a little chili flake

Dressing Options

  • Quick lemon honey dressing: Mix lemon juice, a small spoon of honey, olive oil, pinch of salt, black pepper. (Bright and simple.)
  • Easy sesame lime dressing: Mix lime juice, soy sauce, a little sesame oil, a tiny bit of maple or honey, and chili flakes if desired. (Snacky and addictive.)


Instructions

Preparation

  1. Wash your veggies well. If your cucumber skin is thick or waxy, peel it, but typically leave it on for color.
  2. Use a peeler to shave the carrots into ribbons, rotating the carrot as you go. Snack on the skinny core or chop it up.
  3. Do the same with the cucumber, stopping when you reach the seedy middle to prevent excess water. Pat the ribbons dry if necessary.
  4. Toss the ribbons in a bowl with a pinch of salt and let them sit for 5 minutes to draw out water.
  5. Drain any extra liquid, add your dressing, and toss gently to keep the ribbons intact.

Notes

For a heartier version, pair the salad with something creamy like a chickpea avocado feta salad. Store undressed ribbons separately in a tight container with a paper towel to absorb moisture.
