- 2 large Cucumbers, sliced thin (Use English cucumbers for best results.)
- 6 slices Bacon, cooked until crisp and crumbled (Cook and crumble bacon thoroughly.)
- 1 cup Sour cream (Full-fat for best creaminess.)
- 1 tablespoon Mayonnaise (Just a little for smoothness.)
- 1 tablespoon Apple cider vinegar or white vinegar (For balance.)
- 2 teaspoons Fresh dill (Dried dill can be used in a pinch.)
- 1 teaspoon Salt (Add more to taste.)
- 1/2 teaspoon Black pepper (Add to taste.)
- 1 small Red onion, sliced very thin (optional) (Adds great flavor.)
- 1 teaspoon Sugar (optional) (To round out the vinegar.)
Optional Additions
- 1 cup Cherry tomatoes, halved (For added freshness.)
- 2 tablespoons Chives, chopped (For a hint of onion flavor.)
Instructions
Preparation
- Cook the bacon using your preferred method until crisp. Let cool, then crumble.
- Slice the cucumbers thinly. If you have a mandoline, use it for even slices.
- Salt the cucumbers and let them sit for 10-15 minutes in a colander to drain excess water. Pat dry.
- In a large bowl, mix together sour cream, mayonnaise, vinegar, dill, pepper, and taste for salt. Adjust as necessary.
- Combine the cucumbers, red onion (if using), and most of the crumbled bacon. Toss gently and chill for 20-30 minutes.
- Before serving, top with remaining bacon.
Notes
To keep the salad crunchy, don’t overdress and dry cucumbers before mixing. Best consumed within a few hours for ideal texture.
