A refreshing and creamy cucumber salad with crispy bacon, perfect for summer cookouts and gatherings.


Ingredients

Main Ingredients

  • 2 large Cucumbers, sliced thin (Use English cucumbers for best results.)
  • 6 slices Bacon, cooked until crisp and crumbled (Cook and crumble bacon thoroughly.)
  • 1 cup Sour cream (Full-fat for best creaminess.)
  • 1 tablespoon Mayonnaise (Just a little for smoothness.)
  • 1 tablespoon Apple cider vinegar or white vinegar (For balance.)
  • 2 teaspoons Fresh dill (Dried dill can be used in a pinch.)
  • 1 teaspoon Salt (Add more to taste.)
  • 1/2 teaspoon Black pepper (Add to taste.)
  • 1 small Red onion, sliced very thin (optional) (Adds great flavor.)
  • 1 teaspoon Sugar (optional) (To round out the vinegar.)

Optional Additions

  • 1 cup Cherry tomatoes, halved (For added freshness.)
  • 2 tablespoons Chives, chopped (For a hint of onion flavor.)


Instructions

Preparation

  1. Cook the bacon using your preferred method until crisp. Let cool, then crumble.
  2. Slice the cucumbers thinly. If you have a mandoline, use it for even slices.
  3. Salt the cucumbers and let them sit for 10-15 minutes in a colander to drain excess water. Pat dry.
  4. In a large bowl, mix together sour cream, mayonnaise, vinegar, dill, pepper, and taste for salt. Adjust as necessary.
  5. Combine the cucumbers, red onion (if using), and most of the crumbled bacon. Toss gently and chill for 20-30 minutes.
  6. Before serving, top with remaining bacon.

Notes

To keep the salad crunchy, don’t overdress and dry cucumbers before mixing. Best consumed within a few hours for ideal texture.
