This crustless asparagus quiche is a light, easy-to-make dish perfect for breakfast, lunch, or a light dinner. It’s low-carb, uses minimal ingredients, and cooks in one dish.

- 1 lb fresh asparagus, trimmed and cut into 1–2 inch pieces (Blanch or sauté briefly for tenderness.)
- 6 large eggs (Room temperature for smoother mix.)
- 1 cup milk or half-and-half (Can be substituted with plant-based milk for dairy-free.)
- 1 cup shredded cheese (cheddar, Gruyère, or your choice) (Use a mix of cheeses for more flavor.)
- 1 small onion, thinly sliced and sautéed (optional) (Optional add-in for extra flavor.)
Seasoning and Greasing
- 1–2 tbsp butter or oil for greasing (For greasing the baking dish.)
- 1/2 tsp salt
- 1/4 tsp black pepper

Instructions
Preparation
- Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or similar baking dish.
- Bring a pot of water to a boil. Blanch asparagus for 1–2 minutes until bright green and just tender. Drain and set aside.
- In a bowl, whisk together eggs, milk, salt, pepper, and nutmeg until smooth.
- Stir in cheese and any cooked add-ins like onion or ham.
- Fold in asparagus pieces and pour the mixture into the prepared dish.
Baking
- Bake for 30–40 minutes, or until the center is set and the top is lightly golden. A knife in the center should come out clean.
- Let cool for 5–10 minutes before slicing. Serve warm or at room temperature.
Notes
Serve slices with a side salad, fresh fruit, or roasted vegetables. Warm a slice for a minute in the microwave or oven if needed. Store covered in the fridge for 3–4 days or freeze for up to 2 months.
