Description

This crustless asparagus quiche is a light, easy-to-make dish perfect for breakfast, lunch, or a light dinner. It’s low-carb, uses minimal ingredients, and cooks in one dish.


Ingredients

Main Ingredients

  • 1 lb fresh asparagus, trimmed and cut into 1–2 inch pieces (Blanch or sauté briefly for tenderness.)
  • 6 large eggs (Room temperature for smoother mix.)
  • 1 cup milk or half-and-half (Can be substituted with plant-based milk for dairy-free.)
  • 1 cup shredded cheese (cheddar, Gruyère, or your choice) (Use a mix of cheeses for more flavor.)
  • 1 small onion, thinly sliced and sautéed (optional) (Optional add-in for extra flavor.)

Seasoning and Greasing

  • 12 tbsp butter or oil for greasing (For greasing the baking dish.)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • pinch nutmeg or herbs (optional)


Instructions

Preparation

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or similar baking dish.
  2. Bring a pot of water to a boil. Blanch asparagus for 1–2 minutes until bright green and just tender. Drain and set aside.
  3. In a bowl, whisk together eggs, milk, salt, pepper, and nutmeg until smooth.
  4. Stir in cheese and any cooked add-ins like onion or ham.
  5. Fold in asparagus pieces and pour the mixture into the prepared dish.

Baking

  1. Bake for 30–40 minutes, or until the center is set and the top is lightly golden. A knife in the center should come out clean.
  2. Let cool for 5–10 minutes before slicing. Serve warm or at room temperature.

Notes

Serve slices with a side salad, fresh fruit, or roasted vegetables. Warm a slice for a minute in the microwave or oven if needed. Store covered in the fridge for 3–4 days or freeze for up to 2 months.
