A delicious and fresh take on takeout, featuring flavorful chicken souvlaki, creamy tzatziki, and homemade pita flatbread.
Ingredients
For the Chicken Souvlaki
- 2 pounds chicken thighs or breasts (Thighs stay juicy if overcooked slightly.)
- 3 tablespoons olive oil
- 1 large lemon, juice and zest
- 4 cloves garlic, minced
- 2 teaspoons dried oregano
- to taste salt and pepper
For the Tzatziki Sauce
- 1.5 cups Greek yogurt
- 1 large cucumber, grated and squeezed dry (Squeezing well prevents a watery sauce.)
- to taste fresh dill (or dried) (Fresh is best.)
- 1-2 teaspoons red wine vinegar or lemon juice (Add according to taste.)
- 1 pinch salt
For the Homemade Greek Flatbread
- 2 cups flour
- 1 packet yeast
- 1 cup warm water
- 1 teaspoon salt
- 2 tablespoons olive oil
- 1 teaspoon sugar (For the yeast.)
Optional Toppings
- sliced tomatoes
- thin red onion
- shredded lettuce
- feta
- kalamata olives
Instructions
Marinate the Chicken
- Mix olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl.
- Add chicken, coating well, and marinate for 30 minutes to 6 hours.
Make the Tzatziki Sauce
- Grate cucumber, wrap it in a towel, and squeeze to remove moisture.
- Mix the squeezed cucumber with yogurt, garlic, dill, vinegar, and salt.
- Chill for at least 15 minutes before serving.
Prepare the Flatbread
- Mix warm water, yeast, and sugar. Let it foam.
- Stir in flour, salt, and olive oil, then knead until smooth.
- Let rise until puffy, then divide and roll into flatbreads.
- Cook on a hot skillet until puffed and golden.
Cook the Chicken
- Heat a skillet with a little oil or preheat the grill.
- Cook chicken in batches for about 5 to 7 minutes per side until browned.
- Let it rest before slicing.
Assemble the Gyros
- Warm the pita bread on a dry skillet for about 20 seconds per side.
- Spread tzatziki on the warm pita, add sliced chicken, and top with desired toppings.
Notes
This meal is great for meal prep. Store leftover chicken in the fridge for up to 4 days, and tzatziki for 2-3 days. Pita is best served fresh.
