Ingredients

For the Sweet Potatoes

  • 2 medium medium sweet potatoes, scrubbed (Choose sturdy ones for stuffing.)
  • 4 slices bacon (or compliant turkey bacon) (Cook until crisp.)
  • 2-4 pieces eggs (Depending on potato size and hunger level.)
  • 2-3 tablespoons ghee or olive oil (For mashing the sweet potatoes.)
  • 2 tablespoons unsweetened almond milk (Optional, for creaminess.)
  • to taste salt and pepper (For seasoning.)
  • to taste garlic powder or smoked paprika (Use one or both.)
  • to taste chopped green onions or chives (For mixing into the filling.)

Instructions

Preparation

  1. Preheat your oven to 400°F (200°C). Poke the sweet potatoes a few times with a fork, rub with a little oil, and bake on a sheet pan for about 45 to 55 minutes, until a knife slides in easily.
  2. While the sweet potatoes bake, cook bacon in a skillet until crisp. Save a little bacon fat if you want extra flavor in the filling. Crumble the bacon once it cools.
  3. Once the sweet potatoes are baked, slice them lengthwise and carefully scoop out most of the inside, leaving a thin border so the skins hold their shape.

Make the Filling

  1. Mash the sweet potato with ghee or olive oil, salt, pepper, and your chosen seasonings. Add almond milk for extra creaminess. Mix in most of the crumbled bacon and some green onions.

Stuff and Bake Eggs

  1. Pile the filling back into the skins. Make a small well in the center of each one and crack an egg into a small bowl before sliding it into the well.
  2. Bake at 400°F (200°C) for about 10 to 15 minutes, depending on how runny you like the yolk.

Notes

These can be made ahead of time; bake the sweet potatoes and prepare the filling up to 3 days in advance. Store in an airtight container. In the morning, warm them up, add the eggs, and finish baking.
