Description

A quick and creamy salad that’s perfect for potlucks and gatherings, featuring sweet peas, crispy bacon, and sharp cheddar in a delicious dressing.

Ingredients

Main Ingredients

  • 3 cups frozen peas (Alternatively, use fresh peas that have been blanched.)
  • 6 slices bacon (Cooked and crumbled.)
  • 1 cup sharp cheddar cheese (Shredded.)
  • 1/4 cup red onion (Chopped; soak in cold water for 10 minutes if desired.)

Dressing Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or Greek yogurt (Use Greek yogurt for a tangier option.)
  • 1 tablespoon sugar
  • 1 tablespoon sweet relish
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon apple cider vinegar (Optional for added tang.)

Instructions

Preparation

  1. Pour frozen peas into a colander and rinse with cool water until thawed. Let drain well.
  2. In a big bowl, stir together mayo, sour cream (or Greek yogurt), sugar, sweet relish, salt, and pepper. Taste the dressing; it should be a bit stronger since it will mellow once mixed.

Combine

  1. Add the drained peas, crumbled bacon, shredded cheddar, and chopped red onion to the bowl. Stir gently so the peas remain whole.
  2. Cover and chill for at least 30 minutes, preferably one hour before serving.

Notes

Chill the salad before serving for improved flavor and texture. For variations, you can swap mayo for Greek yogurt or add crunchy elements like diced apple or sunflower seeds.
