A quick and easy family dinner featuring crunchy Doritos, seasoned ground beef, fresh veggies, and a variety of toppings for a customizable salad.
Ingredients
Main Ingredients
- 1 lb Ground beef (Lean is easier, but any ground beef works.)
- 1 packet Taco seasoning (Packet or homemade.)
- 1 head Romaine lettuce or iceberg (Chopped.)
- 1 cup Cherry tomatoes (Halved.)
- 1 cup Shredded cheddar or Mexican blend
- 1 can Canned black beans (Rinsed and drained.)
- 1 cup Corn (Canned, frozen, or leftover.)
- 1/2 small Red onion (Finely chopped (optional).)
- 1 cup Salsa
- 1/2 cup Sour cream or plain Greek yogurt
- 1 bag Doritos (Nacho Cheese is classic; Cool Ranch is great too.)
Optional Extras
- to taste Jalapenos
- 1 Avocado
- to taste Cilantro
- 1 Lime wedges
Instructions
Preparation
- Brown the ground beef in a skillet over medium heat. Break it up as it cooks. Drain extra grease if necessary.
- Stir in taco seasoning with the amount of water specified on the packet. Let it simmer for a few minutes until thickened.
- While the beef is cooking, chop the lettuce and add it to a large bowl, along with tomatoes, beans, corn, onion, and cheese.
- Allow the cooked beef to cool for a couple of minutes, so it’s warm but not piping hot.
- Add the beef to the bowl, and drizzle with salsa or a mix of salsa and sour cream.
- Crush Doritos and sprinkle on top right before serving. Toss or allow everyone to mix their own portions.
Notes
Keep Doritos in their bag until just before serving to maintain crunch. Store ingredients separately to prevent soggy chips and wilted lettuce.
