Description

A cozy and satisfying breakfast made with eggs, feta, tomatoes, and spinach, baked to perfection in the oven for minimal effort.


Ingredients

Main Ingredients

  • 4 pieces Eggs (Use 4 eggs for a small baking dish.)
  • 4-6 ounces Feta cheese (Block feta is ideal for creaminess.)
  • 2-3 cups Fresh spinach (Spinach shrinks when cooked.)
  • 2 handfuls Cherry or grape tomatoes (Choose ripe for best flavor.)
  • enough to coat Olive oil (Drizzle on top before baking.)
  • 1-2 cloves Garlic (Minced or use garlic powder in a pinch.)
  • to taste Salt and pepper (Go light on salt due to feta.)
  • 1 teaspoon Dried oregano or Italian seasoning (Enhances the Mediterranean flavor.)

Optional Ingredients

  • to taste Red pepper flakes (For a spicy kick.)
  • to taste Lemon zest (Adds brightness.)
  • to garnish Fresh basil or parsley (For fresh flavor.)


Instructions

Preparation

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, add chopped tomatoes and drizzle generously with olive oil. Stir in minced garlic, oregano, pepper, and a pinch of salt.
  3. Nestle the block of feta cheese in the center of the dish.

Baking

  1. Bake the tomato and feta base in the oven for about 15 minutes, until the tomatoes start to burst and the feta becomes soft.
  2. Remove the dish from the oven and stir in the fresh spinach until wilted. If it appears dry, drizzle a little more olive oil.
  3. Make wells in the mixture and crack the eggs into them, being careful not to break the yolks.
  4. Return the dish to the oven and bake for another 8-12 minutes, depending on your preferred egg doneness.
  5. Once done, let it sit for 2 minutes to thicken slightly before serving.

Notes

Serve with crusty bread or toast for dipping. This dish is best enjoyed fresh but can be stored in the refrigerator for up to 2 days.
